What each ingredient does

Shin of beef
Breaks down during long simmering to give the broth body and savory depth.
Knuckle of veal
Its bones and gelatin enrich the broth, giving it a fuller, silkier mouthfeel.
Carrots
Release sweetness and color into the broth while keeping their shape during simmering.
Celery
Adds aromatic flavor to the broth as it cooks.
Turnip
Contributes a mild, slightly sweet flavor and tender texture to the soup.
Cauliflower
Adds mild flavor and a tender texture as it cooks in the broth.

The step that matters

Skimming the scum before simmering. Foam that rises during the first boil contains coagulated proteins and impurities. Removing it keeps the broth clear and clean-tasting over the long simmer.
