What each ingredient does

Soft grated cheese
Melts into the sauce to give it its rich, savoury body.
Eggs
Thicken the sauce and add structure as they gently set with the heat.
Ale
Adds liquid and a slightly bitter, malty flavour that balances the rich cheese.
Butter
Enriches the sauce and helps it stay smooth as the cheese melts.
Worcestershire sauce
Adds savoury depth and umami to the cheese mixture.

The step that matters

Adding the eggs to the hot cheese. Egg proteins set at about 70°C and scramble if the mixture is too hot or added too quickly. Tempering with hot cheese first, then stirring continuously over moderate heat, keeps the sauce smooth and thick.
