Why it works: Horseradish and mustard match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,832 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Roast Beef
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Wipe the meat with a wet towel, then with a dry one.
Roast
Place the meat in a dripping pan and add 1 cup of hot water.
Roast in a hot oven at 400°F (200°C) for 12 minutes per pound for small roasts, or 10 minutes per pound for large roasts.
Turn the meat occasionally to brown all sides.
Once done, transfer to a hot platter.
Finish and serve
Pour the pan liquid into a bowl, let the fat solidify, then remove and clarify for dripping.
Use the remaining liquid for soup stock or as a base for stew or hash.
Serve with horseradish sauce and mustard, adding some of the juices from the meat to each slice.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Beef
- Provides the main protein, which firms and browns as it roasts.
The step that matters
Turn the meat occasionally to brown all sides. Browning comes from the Maillard reaction on dry, heated surfaces. Uneven turning leaves pale patches and a less flavorful crust on the roast.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
