Why it works: Clove and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 17,451 recipes. Both carry ethyl octanoate, which smells fruity, wine. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Bone the beef if possible.

  2. Heat a dry frying pan until very hot, then sear the meat on each side until nicely browned.

Braise

  1. Place the seared meat in a braising kettle and add the brown stock, onion, salt, and pepper.

  2. Cover closely and bake in a 350°F (175°C) oven for 40 minutes per pound.

Cool and slice

  1. Let it cool completely covered for best flavor when sliced.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the meat that becomes tender and rich during long, slow braising.
Brown stock
Supplies liquid that keeps the meat moist and carries savory flavor during baking.
Onion
Adds aromatic sweetness and depth to the braising liquid as it cooks.

The step that matters

Searing the meat until nicely browned. Browning creates flavorful compounds through the Maillard reaction. Searing in a very hot pan, with the meat dry, gives color and savory depth that the long braise cannot add on its own.
