Lamb Chops Breaded

Ingredients

Directions

Prepare

  1. Prepare the lamb chops as for plain fried chops.

  2. Dip the chops in the beaten egg.

  3. Roll the chops in the finely sifted cracker or bread crumbs.

Fry and serve

  1. Heat enough clarified drippings in a pan to float the chops, and ensure the drippings are hot before adding the chops; test with a piece of stale bread.

  2. Fry the chops until golden brown, then remove from the pan and drain.

  3. Arrange on a hot platter and garnish with parsley or cress.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb chops
Form the main body of the dish, cooked until tender and browned on the outside.
Beaten egg
Acts as a binder so the crumbs adhere to the chops.
Cracker or bread crumbs
Form a crisp, golden coating that browns during frying.
Clarified drippings
Fry the coating evenly and add rich flavor while browning the crust.

The step that matters

Heat the drippings until hot before adding the chops. If the fat is not hot enough, the breading absorbs oil and turns greasy instead of crisping. A hot pan seals the coating quickly, so the crumbs brown and form a crust that holds together.

Swap the parsley

How well each one fits the dish's main ingredients (lamb, egg, bread):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Capersfits less well
  4. Cinnamonfits less well

Fit is the average pairing score against lamb, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
