Why it works: Thyme and clove match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 4,108 recipes. Both carry cuminaldehyde, which smells Spicy, cumin. The science ↓
Braised Veal
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 300°F (150°C).
Make a stuffing by mixing stale bread, chopped onion, salt, pepper, thyme, and melted beef suet.
Stuff the veal and tie it in shape.
Braise
In a pan, layer sliced carrot, onion, bay leaf, cloves, and peppercorns.
Place the stuffed veal on top of the layer.
Pour stock or water and cooked tomato around the meat.
Add salt and pepper to taste.
Cover the pan closely and place it in the oven.
Cook for 45 minutes per pound of veal.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal shoulder
- Slow, moist cooking breaks down connective tissue into gelatin, keeping the meat tender.
- Stale bread
- Absorbs moisture and gives the stuffing body so it holds together.
- Beef suet
- Adds fat that enriches the stuffing and keeps it moist during cooking.
- Cooked tomato
- Adds acidity and savory depth to the braising liquid.
- Onion
- Softens and sweetens as it cooks, adding aroma to the stuffing and braise.
The step that matters
Cover the pan closely and cook gently at 300°F. A tight cover traps steam so the meat braises in moist heat. Low, slow heat lets connective tissue turn to gelatin without drying the veal out.
Swap the clove
How well each one fits the dish's main ingredients (veal, bread, onion, pepper, thyme, beef, carrot):
- Marjoramfits better
- Parsleyfits better
- Celeryfits better
- Clovethe original
Fit is the average pairing score against veal, bread, onion, pepper, thyme, beef, carrot. Candidates are from the same food group and used in at least 100 recipes.
