Jellied Chicken

Ingredients

Directions

Prepare the chicken

  1. Remove the skin and nails from the chicken feet after soaking them in scalding water.

  2. Cut the meat from the roast chicken into neat pieces, discarding skin and gristle.

  3. Break the bones and place them in a saucepan with the feet and giblets.

Simmer the stock

  1. Add 1 quart of water and simmer for 2 hours, skimming if necessary.

Shape and fry

  1. Form the mixture into rolls about 3 inches long and 1 inch in diameter.

  2. Dip each roll in beaten egg, then roll in cracker crumbs.

  3. Fry in hot drippings for about 2 minutes until golden brown.

What each ingredient does

Chicken feet
Their collagen dissolves into the simmering water and sets into a jelly as it cools.
Egg
Beaten egg acts as a binder so the cracker crumbs stick to each roll.
Cracker crumbs
Form a crisp coating that turns golden when fried.
Hot drippings
Fat conducts heat quickly, browning and crisping the outside of the rolls.

The step that matters

Simmer for 2 hours, skimming as needed. A long, gentle simmer slowly extracts collagen from the feet and bones and converts it to gelatin, which is what makes the mixture set firm. Skimming removes foam and fat that would cloud the jelly and affect its texture.
