Roast Wild Turkey

Ingredients

Directions

Prepare the turkey

  1. Pluck, draw, and wash the turkey thoroughly.

  2. Soak in salted cold water for 30 minutes, then rinse and wipe dry.

  3. Rub the inside with salt and fill with a dressing of moistened bread crumbs, butter, pepper, salt, sage, and chopped onion if using.

  4. Sew up the opening.

Roast

  1. Place the turkey on its back in a roasting pan with hot water and a lump of butter.

  2. Lay thin slices of salt fat pork on the breast to season while cooking.

  3. Cut the rind from the pork.

  4. Sprinkle the turkey with a little salt and baste frequently with the pan water until nearly done, about 1.5 to 2 hours.

  5. Cook the giblets in a saucepan, chop fine, and set aside for the gravy.

  6. Add more hot water to the pan as needed.

Serve and make the gravy

  1. When done, place the turkey on a hot platter garnished with watercress or parsley, and arrange fried oysters around it if desired.

  2. Thicken the gravy with flour and water, season with butter, adjust salt, and add the chopped giblets before serving in a sauce-boat.

What each ingredient does

Wild turkey
Forms the main body of the dish, cooked whole so heat must penetrate evenly.
Bread crumbs
Absorb cooking juices in the stuffing, keeping it moist and tender.
Butter
Adds fat that carries flavour and promotes gentle browning of the skin.
Salt fat pork
Fat that bastes the breast as it renders, adding seasoning and moisture.
Flour
Thickens the pan juices into a smooth gravy by swelling with liquid.

The step that matters

Basting until nearly done. Basting with pan liquid keeps the surface moist and helps it brown evenly. Stopping too early or letting the pan run dry can leave dry meat and a pale skin.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (turkey, bread, butter, pepper, sage, pork, flour):

  1. Capsicumfits better
  2. Shallotfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against turkey, bread, butter, pepper, sage, pork, flour. Candidates are from the same food group and used in at least 100 recipes.
