Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the main starchy, mild body of the salad.
Sour apples
Add acidity and crisp texture that contrasts with the soft chestnuts.
Cold roasted turkey
Adds savory protein and a firm, chewy texture to the salad.
Mixed pickles
Contribute sharp acidity and salty brightness to balance the richer ingredients.

The step that matters

Boil the chestnuts for 20 minutes after scoring. Scoring lets heat and water reach the inner shell and skin so they loosen for peeling. Under-cooked chestnuts stay hard and tear when peeled, while over-cooked ones turn mushy and fall apart when cut into quarters.

Swap the apple

How well each one fits the dish's main ingredients (chestnut, pepper, turkey, meat, lettuce):
