What each ingredient does

Cabbage
Forms the main body of the dish, and its sugars and mild sulfur compounds shape its flavour as it cooks.
Butter
Adds fat and richness, coating the cabbage and carrying its seasoning flavour.
Sugar
Adds a touch of sweetness that balances the sharpness of the vinegar and the cabbage's natural bitterness.
Cider vinegar
Adds acidity that brightens the flavour and offsets the richness of the butter.

The step that matters

Pressing out excess water. Boiled cabbage holds a lot of water, and leftover moisture dilutes the butter and seasoning, leaving the dish watery and flat. Pressing it out lets the butter cling to the cabbage and keeps the flavour concentrated.

Swap the white pepper

How well each one fits the dish's main ingredients (cabbage, sugar, butter, cider, vinegar, egg):

  1. Cinnamonfits better
  2. Tarragonfits better
  3. Dillfits better
  4. White pepperthe original
