Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable gel as it cools.
Chocolate
Provides the main flavour and dark colour, and adds richness to the gel.
Sugar
Sweetens the gel and balances the bitterness of the chocolate.

The step that matters

Dissolving the gelatine fully. Gelatine must be softened in cold water and then dissolved completely in the hot mixture. Undissolved granules leave gritty spots and weak setting, so stir until no grains remain before pouring into the mold.
