What each ingredient does

Tomatoes
Provide the bulk and body of the chutney as they break down during long simmering.
Apples
Add natural pectin and tartness that help the chutney thicken as it cooks.
Brown sugar
Adds sweetness and depth, and helps preserve the chutney along with the vinegar.
Vinegar
Provides acidity that gives sharpness and helps preserve the chutney.
Raisins
Contribute sweetness and chewy texture as they soften during cooking.

The step that matters

Long gentle boil. Simmering for 5 to 6 hours reduces the liquid and concentrates flavors. Boiling too hard can scorch the sugars on the bottom of the pot, so stirring occasionally matters.

Swap the raisin
