Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Scald the milk and butter together, then let cool until lukewarm.

  2. Dissolve the yeast in warm water and add it to the milk mixture along with the Indian meal and salt.

  3. Stir well and beat for a few minutes, then cover and set in a warm place to rise overnight.

  4. In the morning, add the beaten egg and mix well.

Bake and serve

  1. Grease gem tins and fill them half full with the batter.

  2. Let rise until light, then bake in a hot oven at 400°F (200°C) until golden.

  3. Serve hot, wrapped in a napkin.

What each ingredient does

Indian meal
Forms the main structure and gives the muffins their cornmeal flavour and grainy texture.
Yeast
Produces gas as it ferments, making the batter rise and giving the muffins a light, airy crumb.
Egg
Adds structure and richness, helping the muffins set and hold their shape when baked.
Milk
Provides moisture and softness while helping the batter brown in the oven.
Butter
Adds fat for tenderness and rich flavour in the crumb.

The step that matters

Let the batter rise until light before baking. Yeast needs time and warmth to ferment and produce gas. Baking before the batter has risen fully leaves a dense muffin, because the trapped gas that lifts the crumb has not yet built up.
