Rice Border with Fruit

Ingredients

Directions

Cook the rice

  1. Boil a kettle of water and add the rice.

  2. Boil hard for 5 minutes.

  3. Drain the rice and transfer it to a double boiler.

  4. Add the milk and sugar.

  5. Cook, stirring occasionally, until the milk is absorbed.

Mold and unmold

  1. Pack the rice into a slightly buttered border mold and let it cool.

  2. Turn the rice out onto a large platter.

Add the fruit and serve

  1. Press enough berries or fruit to yield a scant cup of juice.

  2. Sweeten with sugar syrup.

  3. Baste the rice with the fruit juice until most is absorbed.

  4. Fill the center with whole fruit and top with stiffly-whipped cream before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Starch that absorbs the milk and sets into a firm, sliceable border when cooled.
Milk
Liquid that the rice absorbs, giving the cooked rice a soft, creamy texture.
Sugar
Sweetens the rice as it cooks in the milk.
Berries or fruit
Provides juice for basting and whole fruit for the center, adding moisture and fresh flavor.
Stiffly-whipped cream
Adds rich fat and a light, airy topping that contrasts with the rice.

The step that matters

Cook until the milk is absorbed. If the rice is removed while still wet, it will not hold its shape in the mold. Cooking until the liquid is absorbed lets the starch thicken and firm up so the border can be unmolded cleanly.
