Why it works: Gelatin and sugar are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 2,778 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatin
- Sets the liquid so the sherbet holds its shape rather than freezing into hard ice.
- Sugar
- Adds sweetness and softens the texture of the frozen mixture.
- Oranges
- Provide the main flavour and acidity, along with the juice that forms the base.
The step that matters
Dissolving the soaked gelatin in boiling water. Gelatin must be fully dissolved before it is added, or it can form lumps or uneven pockets of set texture in the frozen sherbet.

Fit is the average pairing score against gelatin, sugar. Candidates are from the same food group and used in at least 100 recipes.
