Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a very hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Choose beef that is bright red, elastic, and has a thick layer of fat.

  2. Heat a pan on the stove until hot.

  3. Sear the meat on all sides using a fork.

  4. Place the meat on a rack in the pan, sprinkle with flour, salt, and pepper.

Roast

  1. Add 2 tablespoons of drippings to the pan, but do not add water.

  2. Roast in a very hot oven (400°F) for 10 minutes.

  3. Reduce the heat.

  4. Baste often with the fat in the pan.

  5. Roast for 10 minutes per pound for rare, 15 minutes for well done.

Make the gravy

  1. For gravy, pour the fat from the pan into a bowl.

  2. Add about 1 pint of hot water or stock to the pan to collect the drippings.

  3. In a saucepan, heat 4 tablespoons of hot fat.

  4. Stir in 2 tablespoons of flour.

  5. Add the hot water or stock.

  6. Season the gravy to taste with salt, pepper, Worcestershire sauce, ketchup, or mushrooms.

  7. Cook for 10 minutes.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Beef and flour barely smell alike, yet cooks put them together in 10,677 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Fat layer bastes the meat as it roasts, keeping the lean interior moist and flavorful.
Flour
Coats the surface and, in the gravy, thickens the drippings into a smooth sauce.
Drippings
Hot fat that browns the meat's surface and carries flavor through the roasting.
Hot water or stock
Dissolves the pan residue into the drippings, forming the base of the gravy.

The step that matters

Sear the meat and roast in a very hot oven. Searing and high initial heat brown the surface through Maillard reactions, building flavor and a crust. Basting keeps the surface from drying as the interior cooks.
