Roast Veal

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Preheat your oven to 350°F (175°C).

  2. Stuff the fillet with highly seasoned bread stuffing and skewer it into shape.

  3. Cover the top of the veal with thin strips of salt pork or lard using a larding needle.

  4. Season the veal with flour, coarse sea salt, and black pepper.

Roast and serve

  1. Roast for 25 minutes per pound.

  2. Make gravy from the drippings in the pan.

  3. Serve with horseradish.

What each ingredient does

Veal fillet
Forms the main body of the roast and is the dish's central protein.
Salt pork or lard
Adds fat that bastes the surface, keeping the lean veal moist and flavourful as it roasts.
Flour
Dries the surface slightly and helps the exterior brown and form a light crust.
Bread stuffing
Fills the cavity and adds moisture and savoury flavour to the centre of the roast.

The step that matters

Roast for 25 minutes per pound. Veal is lean and dries out quickly when overcooked, so timing by weight matters. Because the stuffing sits in the centre, the meat needs to reach a safe internal temperature without being pushed past tender. Checking with a thermometer is more reliable than the clock alone.

Swap the horseradish

How well each one fits the dish's main ingredients (veal, pork, flour, pepper, bread):

  1. Capsicumfits better
  2. Potatofits better
  3. Shallotfits better
  4. Horseradishthe original

Fit is the average pairing score against veal, pork, flour, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
