Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Lard the parboiled sweetbreads in even rows.

  2. Sprinkle with flour, coarse sea salt, and black pepper.

  3. Bake in a 400°F (200°C) oven until brown.

  4. Cut sweetbreads into cubes and serve in white sauce on toast, patty cases, or timbale cases.

  5. For ramquin dishes, cut sweetbreads into small pieces and mix with cream or poulette sauce.

  6. Butter the dishes well and fill them two-thirds full.

  7. Cover with buttered crumbs and bake for eight minutes.

  8. Serve immediately.
