Roast Goose

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the goose

  1. Singe the goose and remove the pin feathers.

  2. Wash the goose in warm soapy water to cleanse it and open the pores.

  3. Drain and wash in cold water, then wipe dry inside and out.

  4. Stuff the goose with potato stuffing, sew it up, and truss it.

Roast

  1. Place the goose on a rack in a pan and cover the breast with slices of fat salt pork.

  2. Roast in a 400°F (200°C) oven for one hour.

  3. Remove the pan from the oven and pour off all the fat.

  4. Dredge the goose with flour.

  5. When the flour is brown, add a little hot water.

  6. Baste often.

  7. Cook until the goose is brown and tender.

Make gravy and serve

  1. Make gravy from some of the fat in the pan, flour, and hot water, seasoning to taste.

  2. Serve with apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Provides the main meat, which becomes tender and browned through slow roasting.
Fat salt pork
Covers the breast and bastes the bird with rendered fat as it roasts.
Flour
Dredged over the goose to brown, and thickens the gravy made from the pan fat.
Potato stuffing
Fills the cavity, adding moisture and flavour from inside the bird as it cooks.

The step that matters

Pouring off the fat and basting. Goose carries a lot of fat. Draining it after the first hour keeps the skin from turning greasy, while regular basting moistens the meat and helps the skin brown evenly.

Swap the apple

How well each one fits the dish's main ingredients (potato, pork, flour, sauce):

  1. Avocadofits better
  2. Raisinfits better
  3. Coconutfits about as well
  4. Applethe original

Fit is the average pairing score against potato, pork, flour, sauce. Candidates are from the same food group and used in at least 100 recipes.
