What each ingredient does

Sweetbreads
Provide the tender, delicate meat that is the body of the dish.
Bread crumbs
Absorb the cream and butter, keeping the stuffing moist and giving it body.
Mushrooms
Add savory, earthy flavour and moisture to the stuffing.
Cream
Adds moisture and richness to the stuffing so it stays soft while baking.
Currant jelly
Adds sweetness and helps the surface brown as the basting mixture cooks down.

The step that matters

Basting during baking. Basting with the wine and currant jelly mixture builds a glossy, browned glaze and keeps the sweetbreads from drying out in the oven. Sugars in the jelly caramelise and brown more quickly than the meat itself, so the glaze can darken before the centre is cooked, so watch the colour.

Swap the nuts

How well each one fits the dish's main ingredients (bread, mushroom, cream, butter, pepper, white wine, currant):

  1. Peasfits better
  2. Chestnutfits better
  3. Beansfits better
  4. Nutsthe original

Fit is the average pairing score against bread, mushroom, cream, butter, pepper, white wine, currant. Candidates are from the same food group and used in at least 100 recipes.
