What each ingredient does

Sweetbreads
Provide the tender, meaty filling that forms the main body of the dish.
Butter
Enriches the sauce with fat and flavor, and browns the breadcrumb topping.
Flour
Thickens the butter and stock mixture into a smooth, binding sauce.
Chicken stock
Adds savory liquid that, with the flour, forms the body of the sauce.
Cream
Adds richness and moisture, giving the sauce a smooth, silky texture.
Bell peppers
Serve as the edible vessel that holds and carries the filling.

The step that matters

Adding the stock and cream to the flour. Adding liquid gradually while stirring keeps the roux smooth; adding it all at once can trap lumps of flour that the sauce cannot later smooth out.
