Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main meaty body and tender texture of the mould.
Gelatine
Sets the cream mixture so it holds its shape when chilled.
Heavy cream
Adds richness and a soft, light texture once whipped.
Lemon juice
Adds acidity that brightens the rich cream and sweetbreads.

The step that matters

Dissolve gelatine in boiling water. Gelatine must be fully dissolved before mixing, or it will set in specks and leave an uneven texture. Adding it to cream and lemon juice too early or too cool can also cause lumps, so it should be fully liquid and evenly blended in before the mould chills.

Swap the mace

How well each one fits the dish's main ingredients (onion, lemon, cream, cucumber, lettuce):

  1. Tarragonfits better
  2. Capersfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against onion, lemon, cream, cucumber, lettuce. Candidates are from the same food group and used in at least 100 recipes.
