Butter Scotch Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the thin pastry and cut it into three circles the size of a pie plate.

  3. Prick the pastry circles well with a fork.

  4. Bake the pastry circles on a tin sheet until golden and cool.

  5. Layer the butter scotch filling between the cooled pastry circles.

  6. Top the pie with meringue.
