Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Maple syrup
Provides the main sweetness and maple flavour of the parfait.
Egg yolks
Thicken the syrup base into a rich custard and add richness.
Heavy cream
Whipped to stiff peaks, it adds air and a creamy, smooth texture.
Egg whites
Folded in whipped form, they lighten the mixture and add airy structure.

The step that matters

Cooking the yolks and syrup while stirring continually. Egg yolks can scramble or curdle if they overheat or sit still over heat. Constant stirring spreads the heat evenly and thickens the custard smoothly.
