Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet bulk of the fudge and, as it cooks and cools, sets into a fine-grained, firm texture.
Chocolate
Provides the chocolate flavor and fat that give the fudge its richness and body.
Cream
Adds moisture and fat, producing a smoother, softer texture in the finished fudge.
Butter
Contributes fat for a tender, creamy mouthfeel and smooth texture.

The step that matters

Stir until thick and creamy. Stirring while the cooked syrup cools causes fine sugar crystals to form, giving smooth fudge. Stirring too early or too late can leave it grainy or stiff, so timing matters.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, chocolate, cream, butter):

  1. Almondfits better
  2. Filbertfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, chocolate, cream, butter. Candidates are from the same food group and used in at least 100 recipes.
