What each ingredient does

Corn starch
Thickens the milk into a smooth gruel as its starch granules swell when heated.
Milk
Forms the liquid base and gives the gruel its body and mild, creamy flavor.

The step that matters

Mixing the corn starch into cold milk before adding it to the hot milk. Starch clumps when it meets hot liquid directly. Dispersing it in a little cold milk first lets the granules separate, so the gruel thickens smoothly.
