Stuffed Apples

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Select small, perfect apples and core them without peeling.

  2. Stuff the cored apples with mince meat.

  3. Dust the stuffed apples lightly with paprika.

  4. Place the apples in a baking dish and baste with melted butter.

  5. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

  6. Just before removing from the oven, butter again and dust with bread crumbs.

  7. Serve with roasted duck or goose.
