Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help the fritters set as they cook.
Flour
Thickens the batter so it holds together in the hot fat.
Royal baking powder
Releases gas that lightens the fritters as they fry.
Corn
Provides the main body, sweetness and flavor of the fritters.
Lard
Heats the fritters and gives them a crisp, browned surface.

The step that matters

Drop spoonfuls into hot fat. If the lard is not hot enough, the batter absorbs fat and turns greasy instead of browning quickly. Heating the fat fully before frying helps the fritters seal and cook through with a crisp exterior.
