Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eggplant

  1. Parboil the eggplant until almost tender.

  2. Cut the eggplant in half lengthwise and scoop out the center, leaving an eighth of an inch of rind.

Fill and bake

  1. Chop the scooped-out flesh and season with pepper, salt, butter, and bread crumbs.

  2. Return the mixture to the eggplant shells and sprinkle additional bread crumbs on top.

  3. Dot with small pieces of butter and bake in a 400°F (200°C) oven until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the edible shell and the soft, moist filling once cooked.
Butter
Adds richness and helps the top brown as it melts in the oven.
Bread crumbs
Absorb moisture from the flesh and add a light texture and golden crust.

The step that matters

Parboil the eggplant until almost tender. Parboiling softens the flesh so it can be scooped out without tearing the shell. Stopping while still slightly firm keeps the shells sturdy enough to hold the filling through baking.
