Stuffed Spanish Onions

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Remove the thin outer skin and twist off the roots of the onions.

  2. Cover the onions with boiling salted water and boil gently for 15 minutes, then drain and let cool slightly.

Make the filling

  1. In a frying pan, cook the chopped kidney with butter, salt, and pepper until nicely colored.

  2. Stir in the bread crumbs and remove from heat.

  3. Cut off the tops of the onions and scoop out the centers, then chop the centers and add to the kidney mixture.

Stuff and bake

  1. Stuff the onions with the mixture, mounding it over the tops.

  2. Arrange the stuffed onions in a baking pan, placing a small piece of butter on each.

  3. Half fill the pan with stock and bake at 350°F (175°C) for 40 to 60 minutes.

What each ingredient does

Spanish onions
Form the edible shell that holds the filling and softens as it bakes, becoming sweet.
Veal kidney
Provides the rich, savory meat base of the filling, browning in the pan for depth of flavor.
Bread crumbs
Absorb juices and bind the kidney mixture so the filling holds its shape.
Butter
Adds fat for richness and helps the filling and onion tops brown in the oven.

The step that matters

Cooking the kidney until nicely colored. Browning the kidney in the pan builds deep, savory flavor through the Maillard reaction. Undercooked, pale meat tastes flat and may stay grey and soft in the filling.

Swap the onion

How well each one fits the dish's main ingredients (veal, butter, pepper, bread):
