Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the filling, becoming soft and cohesive when mashed.
Eggs
Bind the mashed mixture so the croquettes hold their shape.
Butter
Adds fat and richness, keeping the filling moist and tender.
Onion
Adds savoury flavour to the potato filling.
Bread crumbs
Form a crisp outer coating that browns during frying.

The step that matters

Frying the coated croquettes. The oil must be hot enough to brown the crumb coating quickly. If it is too cool, the croquettes absorb more oil, turn greasy, and the filling can loosen before a crisp crust forms.
