Ingredients

Directions

The book says “a moderately quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Take a sufficient quantity of bread dough to make a small loaf and divide it into six parts.

  2. Roll each part into straight, even lengths and fasten them together at one end.

  3. Braid the strands to form a single flat loaf and place it in a greased long, flat cake tin.

  4. Flatten the loaf to fill the pan and let it rise in a warm place for 30 minutes or until light.

  5. Brush the top with melted butter and bake for 30 minutes at 350°F (175°C).

  6. Once done, let it stand for 15-20 minutes, then pull the strips apart.

  7. Brush the strips again and return to the hot oven for 8-10 minutes until crisp.
