Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chocolate minute gelatine
Sets the milk into a jelly with a chocolate flavor.
Hot milk
Dissolves the gelatine and forms the liquid base of the jelly.
Walnut meats
Add crunch and nutty texture to the soft jelly.
Figs
Add chopped pieces of fruit sweetness and chewy texture.

The step that matters

Beating when it starts to congeal. If the mixture is beaten after it has set firmly, it will not whip into a light froth. Beating while it is just thickening traps air in a soft gel, giving a lighter texture.

Swap the fig

How well each one fits the dish's main ingredients (chocolate, milk, walnut, meat, cream):

  1. Vanillafits better

  3. Figthe original
  4. Cherryfits less well

Fit is the average pairing score against chocolate, milk, walnut, meat, cream. Candidates are from the same food group and used in at least 100 recipes.
