Cup Custard with Nuts

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the custard

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the eggs with the sugar and salt.

  3. Stir in the chopped nuts and milk.

  4. Add the vanilla and mix well.

  5. Pour the mixture into custard cups and bake until firm in the center.

Cool and top

  1. Let cool for an hour.

  2. Top each custard with a spoonful of jelly.

Add the meringue and brown

  1. In a separate bowl, beat the egg white until frothy, then gradually add the powdered sugar.

  2. Spread the meringue over the custards, dust with sugar, and brown in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard, giving it structure as they bake firm.
Milk
Provides the liquid base that the eggs set into a custard.
Sugar
Adds sweetness and helps the meringue become glossy and stable.
Egg white
Whipped into a foam that forms the meringue topping.
Chopped nuts
Add texture and a toasty, nutty flavour to the custard.

The step that matters

Bake the custard until just firm. Egg proteins set as they heat, so pulling the custards out once the centre is just firm keeps them tender. Overbaking squeezes out liquid and makes them grainy and watery.

Swap the nuts

How well each one fits the dish's main ingredients (egg, sugar, milk, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Cocoafits better
  4. Nutsthe original

Fit is the average pairing score against egg, sugar, milk, vanilla. Candidates are from the same food group and used in at least 100 recipes.
