What each ingredient does

Rhubarb
Provides the main flavour and bulk, and its pulp gives the molds body.
Gelatine
Sets the rhubarb purée into a firm, sliceable mold as it cools.
Whipped cream
Adds richness and a softer, lighter texture to the set mold.

The step that matters

Mix the dissolved gelatine thoroughly with the hot rhubarb. Gelatine must be fully dissolved and evenly distributed, or it will not set uniformly and may leave soft or rubbery patches in the mold.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, cream):

  1. Nutmegfits better
  2. Cinnamonfits about as well
  3. Rhubarbthe original
  4. Gingerfits less well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
