Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the mold by ornamenting it with chilled, blanched vegetables like carrots, beets, or truffles.

  2. In a bowl, combine the raw pulp of fowl, veal, brains, sweetbreads, or fish with cooked pulp of cured ham or pickled tongue.

  3. Add cooked vegetables and mix in a thick sauce or cream.

  4. If using eggs, beat them slightly and fold into the mixture for a smooth texture.

  5. For a mousse, separate the yolks and whites of the eggs, beat the whites stiff, and fold in last.

  6. Fill the prepared mold with the mixture and bake in a 350°F (175°C) oven until firm.

  7. Unmold before serving.
