Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spinach
Provides the main body, color and green flavor of the soup.
Butter
Adds richness and a smooth, silky mouthfeel to the soup.
Strong stock
Forms the liquid base that carries the flavors and thins the spinach paste.
Granulated sugar
Rounds out flavor and softens the savory edges of the spinach.

The step that matters

Bringing the strained soup back to heat. Once the butter and sugar are stirred in, the soup should be kept just below a boil. Boiling hard can cause the butter to separate and dull the fresh green color of the spinach.
