Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix bread crumbs, salt, pepper, butter, parsley, and egg yolk.

  3. Stuff the shad with the mixture and sew it up or tie it with string.

Bake

  1. Place the shad in a baking dish, pour a little water and additional butter over it.

  2. Bake for 1 to 1¼ hours.

Make the dressing and serve

  1. For the dressing, boil the gravy from the baking dish.

  2. Stir in catsup, brown flour mixed with cold water, lemon juice, and sherry or Madeira.

  3. Serve the dressing in a sauce boat alongside the shad.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Binds the bread crumb stuffing so it holds together inside the fish.
Bread crumbs
Absorb butter and juices, giving the stuffing body and a soft texture.
Brown flour
Thickens the pan gravy into a smooth, glossy sauce for the dressing.
Sherry or madeira wine
Adds acidity and depth of flavour to the dressing.
Butter
Adds fat and richness, helping the fish brown and stay moist while baking.

The step that matters

Stir the brown flour into the boiling gravy. Flour lumps if added to hot liquid without being first smoothed in cold water, so the brown flour must be mixed with cold water before it goes into the boiling gravy to thicken evenly.
