Baked White Fish

Ingredients

Directions

  1. Remove the head from the fish if desired and cut out the backbone, leaving two inches from the tail.

  2. In a skillet, fry the chopped onion in 2 tablespoons of butter until soft.

  3. Mix the fried onion with the soaked bread, 2 ounces of butter, salt, pepper, and parsley or sage.

  4. Heat the mixture through, then remove from heat and stir in the beaten egg yolks.

  5. Stuff the fish with the mixture, sew it up with fine twine, and wrap it with white tape.

  6. Rub the outside of the fish with butter.

  7. Cover the bottom of a baking pan with hot water and place the fish in it, standing upright in a bent shape.

  8. For the dressing, mash the hard-boiled egg yolks into a smooth paste with salad oil, then stir in mustard, pepper, and vinegar to taste.
