Scalloped Fish

Ingredients

Directions

  1. Remove all bones from the cold fish or salt codfish and mince it finely.

  2. In a saucepan, heat 1 pint of milk over boiling water. Add the onion, parsley, butter, salt, and white pepper.

  3. Stir in the corn starch or flour mixed with a little cold milk and let it boil, then remove from heat.

  4. Butter the sides and bottom of a serving dish. Layer minced fish, cream mixture, and cracker or bread crumbs, repeating until the dish is full.

  5. Finish with a layer of cracker or bread crumbs on top to prevent scorching.
