Roast Leg of Pork

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut a slit in the knuckle of the pork leg and fill it with sage, onion, pepper, and salt.

  3. Score the skin in slices without cutting deeper than the outer rind.

Roast and make the gravy

  1. Roast the pork until half done.

  2. Remove excess fat from the roasting pan.

  3. Stir flour with a little water to make a paste. Add the paste to the pan.

  4. Add water to achieve the desired gravy consistency.

Serve

  1. Serve in a gravy boat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork leg
Provides the main meat, which becomes tender and juicy as it roasts.
Flour
Thickens the pan juices into a smooth gravy when stirred in as a paste.
Onion
Adds savory aroma and sweetness as it cooks inside the pork.
Sage
Contributes an herbal aroma that flavors the meat from within.

The step that matters

Remove excess fat from the roasting pan. Leaving too much fat makes the gravy greasy and can keep the flour paste from thickening smoothly. Pouring off most of the fat keeps the gravy clean and well flavored.

Swap the onion

How well each one fits the dish's main ingredients (pork, sage, pepper, flour):

  1. Capsicumfits better
  2. Turnipfits better
  3. Spinachfits better
  4. Onionthe original
