What each ingredient does

Tart apples
Provide the bulk and pectin that give the ketchup its body and thickness.
Sugar
Adds sweetness and helps balance the sharpness of the vinegar.
Vinegar
Adds acidity that sharpens flavour and helps preserve the ketchup.
Onions
Add savoury depth and aroma to the sauce.

The step that matters

Boiling for one hour. A long boil evaporates water and concentrates the sauce so it thickens. Under-boiling leaves it thin and more prone to spoiling, so the mixture should be kept at a steady boil for the full time.

Swap the onion

How well each one fits the dish's main ingredients (apple, sugar, pepper, clove, mustard, cinnamon, vinegar):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Radishfits better
  4. Onionthe original

Fit is the average pairing score against apple, sugar, pepper, clove, mustard, cinnamon, vinegar. Candidates are from the same food group and used in at least 100 recipes.
