Welsh Rarebit

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cheese mixture

  1. Mix the grated cheese with the egg yolks in a bowl.

  2. Add the grated bread, butter, mustard, salt, and pepper, and mix well.

Prepare the toast

  1. Toast the bread slices and remove the crusts.

  2. Cut the toasted bread into shapes.

Bake and serve

  1. Spread the cheese mixture thickly on top of the bread shapes.

  2. Place the prepared bread in a 400°F (200°C) oven until hot and slightly browned.

  3. Serve immediately while hot.

What each ingredient does

Dry cheese
Melts into a rich, savoury sauce that gives the rarebit its main flavour and body.
Egg yolks
Bind the cheese mixture and help it set into a thick, spreadable topping.
Grated bread
Absorbs melted butter and cheese, adding body and helping the topping hold together.
Butter
Adds fat and richness, keeping the cheese mixture smooth and glossy.
Made mustard
Adds sharpness that balances the richness of the cheese and butter.

The step that matters

Baking until hot and slightly browned. Cheese mixtures can turn greasy or rubbery if overheated, while underheating leaves the topping cold and unset. Watching for a light golden colour and bubbling edges gives a smooth, lightly browned topping.
