Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a large bowl, mix the cornmeal and flour together.

  2. Gradually add the sour milk, followed by the melted butter, molasses (or sugar), and salt.

  3. Stir in the beaten eggs.

  4. Dissolve the baking soda in a little milk and mix it into the batter thoroughly.

Bake

  1. Pour the batter into well-buttered baking tins that are not very shallow.

  2. Bake for nearly 1 hour at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornmeal
Provides the main body and the characteristic grainy, crumbly texture of the bread.
Sour milk
Its acidity reacts with the baking soda to produce gas that lifts the batter.
Eggs
Bind the batter and help set the crumb as it bakes.
Baking soda
Reacts with the acidic sour milk to leaven the cornbread so it rises.
Molasses or sugar
Adds sweetness, moisture and browning to the crust.
Melted butter
Adds fat for tenderness and a rich flavour.

The step that matters

Dissolve the baking soda in a little milk and mix it into the batter thoroughly. Baking soda needs to be evenly distributed so it reacts with the sour milk throughout the batter. Pockets of unmixed soda can leave soapy, bitter spots and uneven rising.
