Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the custard as they set and add richness to the filling.
Flour
Thickens the milk mixture so it becomes a spreadable filling.
Cornstarch
Thickens the milk mixture so it becomes a spreadable filling.
Sugar
Sweetens the filling and adds body to the custard.
Milk
Forms the liquid base that thickens into the custard.

The step that matters

Cook until thickened like custard. Stirring the hot milk into the egg mixture gradually and cooking it until thickened keeps the eggs from scrambling and lets the starch and egg proteins set the filling smooth and firm enough to spread.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (milk, egg, flour, sugar, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against milk, egg, flour, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
