Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sponge cakes
Form the edible shell that holds the custard and toppings.
Egg yolks
Thicken the milk into a custard through heat-set proteins.
Egg whites
Whip into a stiff foam that forms the meringue topping.
Powdered sugar
Sweetens the meringue and helps it stay stable when whipped.
Jelly or jam
Adds fruity sweetness and a layer between custard and meringue.

The step that matters

Beat the egg whites until stiff peaks form. Egg whites under-whipped stay runny and won't hold the meringue on top, while over-whipped whites turn grainy and collapse. Stiff peaks that stand upright and look glossy give a stable topping.
