What each ingredient does

Fruit juice
Provides the main flavour and acidity, and the liquid base of the ice cream.
Cream
Adds fat and richness, and whipping it traps air for a light, smooth texture.
Sugar
Sweetens the juice and helps keep the frozen ice cream softer and smoother.

The step that matters

Whipping the cream before combining. Cream must be whipped only until slightly thickened. Overwhipping can turn it grainy or buttery, and it will not blend smoothly with the juice.
