Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Form a foam-stabilizing structure that helps give the drink a light, frothy body.
Gum arabic
Acts as a stabilizer that keeps the syrup smooth and helps foam hold together.
Sugar
Provides sweetness and body to the syrup.
Bicarbonate of soda
Reacts with tartaric acid to release carbon dioxide, creating fizz when the two mixtures combine.
Tartaric acid
Reacts with bicarbonate of soda to release carbon dioxide, creating fizz and a tart edge.

The step that matters

Combining the two bowls at serving. Bicarbonate of soda and tartaric acid only fizz when they meet in water, so each mixture must be kept separate until serving to avoid losing carbonation early.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Dillfits about as well
  4. Parsleyfits about as well

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
