Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the drink as they set gently with heat, giving it body.
Ale
Forms the liquid base and provides the main flavour of the drink.

The step that matters

Pour hot ale into the egg mixture. Adding hot liquid to eggs too quickly can scramble them. Stirring constantly while pouring gradually raises the egg temperature so the proteins set smoothly rather than curdling.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, butter):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Capersfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against egg, butter. Candidates are from the same food group and used in at least 100 recipes.
