Pineapple Vinegar

Ingredients

Directions

Make the vinegar

  1. Cover the sliced pineapples with cider vinegar and let them stand for 3 to 4 days.

  2. Mash the mixture and strain it through a cloth until the liquid runs clear.

Cook and bottle

  1. In a pot, combine the juice with 5 pounds of sugar and boil for 10 minutes. Skim off any foam that rises to the surface.

  2. Remove from heat and let cool before bottling.

What each ingredient does

Pineapple
Provides the fruit flavor and natural sugars that the vinegar takes on.
Cider vinegar
Acts as the base liquid that extracts flavor from the pineapple and gives the vinegar its tang.
Sugar
Adds sweetness and body, balancing the sharpness of the vinegar.

The step that matters

Skim off any foam while boiling. Foam rising to the surface carries impurities and fruit solids. Removing it keeps the syrup clear and stops off flavors and cloudiness from settling into the bottled vinegar.
